Through Corrida Cattle Company, we are working to build a more thoughtful relationship between the ranch, the restaurant, and the plate. Our cattle are raised using regenerative practices designed to care for the land, strengthen the soil, and honor the natural systems that sustain us.

That philosophy feels especially meaningful here. Set within Denver’s historic National Western Center, The Stockton is rooted in a place shaped by generations of ranchers, farmers, and cattlemen. We carry that heritage forward with a modern perspective—one centered on responsible sourcing, exceptional quality, and respect for every step of the process.

From pasture to plate, our beef represents something bigger: stewardship of the land, pride in the American West, and a commitment to serving food with genuine purpose.
